Cranberry Orange Skinny Muffins

I simply adore these little festive muffins. They taste amazing cut in half and broiled in the toaster oven topped with some honey or spray butter. They make an amazing on the go breakfast or snack. They contain no artificial flavorings or sweeteners or any refined sugars. They are great for low carb, low fat diets and those who are gluten intolerant.

Ingredients:
-2 egg whites
-1 and 1/2 servings True Nutrition vanilla hydrolyzed whey (Discount Code: Eatingbrofood)
-1/2 cup fresh cranberries
-Orange zest
-Juice or half an orange
-1 cup oat flour
-2 overly ripe bananas
-1 tsp. baking powder
-3 spoonfuls baking Truvia
-1 tbsp. coconut oil
-1 tsp. vanilla extract
-1 spoonful low fat Greek plain yogurt

Directions:
-Mash bananas with potato masher or blender or food processor
-Zest orange and add half the juice to a bowl
-Add rest of ingredients to bowl and mix
-Add to sprayed loaf pan or greased 12 cup muffin tin
-Bake at 350 degrees Fahrenheit for about 25-30min

1 Minute Protein Birthday Bowl Cake

This is the BEST way to cap-off your macros at the end of the day. Feel free to mix it up using different cake mixes, protein powders and low-fat ice creams. Let me know if you try other combos! Also make sure you are using A BOWL a mug will not fit all this goodness!

Birthday Bowl Cake Ingredients:
-1/2 serving Funfetti cake mix
-1/2 scoop Optimum Nutrition Birthday Cake Whey
-1/2 serving vanilla bean Halo Top
-1 tsp. baking power
-1 egg white
-1 spoonful of plain Greek yogurt
-Sprinkles for on top

Directions:
-Spray medium glass bowl with Pam spray
-Mix together all ingredients but the Halo Top and Sprinkles
-Put mixture into sprayed bowl
-Microwave for around 1 minute, 30 seconds
-Top with Halo Top and Sprinkles

Pumpkin Protein Pancake Stack

Me again: immediately bakes pumpkin spice everythang.

This pumpkin spice stack is mouthwatering. The pancakes themselves are super moist, delicious and exactly what you need this season. I love dark agave on pancakes. It is always my go to. I usually add a little bit of maple extract to make it taste more like pure maple syrup. I love agave because it is refined sugar free and has a lower glycemic index.
Feel free to sub the Trader Joe’s pancake mix for any mix you have laying around. You can even replace it with oat flour. The same goes for the protein powder but make sure it is decent for baking. Feel free to experiment with toppings some of my favorites are: pumpkin puree mixed with Truvia, pumpkin pie spice and plain yogurt, pumpkin morsels, white chocolate chips and Frozen Truwhip. Get creative!

Pumpkin Protein Pancake Stack Ingredients:
-100g canned pumpkin
-1 serving Trader Joe’s toasted coconut pancake mix
-1 egg white
-1 tbsp. almond milk unsweetened
-1 tbsp.. nonfat plain Greek yogurt
-1 tsp. vanilla extract
-15g True Nutrition vanilla whey protein
-10g coconut flour
-1 packet Truvia
-Pumpkin pie spice

Directions:
-Mix ingredients in a large bowl
-Spray large skillet and cook 2-3 minutes on each side
-Makes about 10 small pancakes
-Top with nonfat ready whip and agave

Funfetti Cake Batter Protein Pancake Ingredients:
-20g oat flour
-20g Trader Joe’s Multigrain pancake mix
-1 tsp vanilla extract
-1 tbsp Greek plain yogurt
-2 egg whites
-1 spoonful baking Truvia
-Sprinkles for in batter
-1/2 scoop vanilla Lean body for her whey protein

Directions:
-Spray fry pan with coconut oil spray
-Cook batter until golden and add sprinkles and rainbow candies

Caramel Banana Protein Pancakes

So happy Bodybuilding Warehouse let me try their Caramel Banana Protein Pancake Mix. The mix was delicious and has a over 20g of protein per serving as still makes fluffy pancakes! Ingredients:
-50g Bodybuilding Warehouse caramel banana pancake mix
-1 tbsp coconut flour
-2 tbsp unsweetened almond milk
-1/2 tbsp Truvia baking sweetener
-1 tbsp nonfat Greek plain yogurt
-1 egg white

Topping Ingredients:
-1 Trader Joe’s Caramel
-1/2 a Small banana

Directions:
-Spray a fry pan and put on medium heat
-Spray pan with coconut oil spray
-Cook pancakes for approximately 2 minutes on each side
-Melt caramel in the microwave for 7 seconds
-Cut 1/2 of the banana into coins
-Devour

Gluten-Free PB Chocolate Protein Pancakes

These pancakes are gluten-free, all natural and super easy. They melt in your mouth and pack a lot of protein without any protein powder. They are magical and taste like chocolate and peanut butter covered bananas.

Ingredients:
-1 Banana (95g)
-1 tbsp. cocoa powder
-1 egg white
-2 tbsp. PBfit chocolate (or another powdered peanut butter)
-1 packet of Truvia

Directions:
-Mash all ingredients with a potato masher (or blender)
-Heat skillet to medium heat
-Grease skillet
-Cook pancakes about 1.5 minutes each side

Brownie Batter Explosion Protein Pancakes

Once you go black you never go back! Obviously who ever started that phrase was talking about my dark chocolate brownie batter protein pancakes. Each bite will be filled with rich chocolate chips, gooey ganache and delectable brownie batter cookie dough. You definitely won’t want to share these pancakes!

Pancake Ingredients:
-15g Lean Body for Her chocolate protein powder
-1 serving Trader Joe’s toasted coconut pancake mix
-1 spoonful of non fat Greek plain yogurt
-1 splash of unsweetened almond milk
-1 Truvia
-1 tsp. vanilla extract
-1 egg white

Topping Ingredients:
-1 tbsp. chocolate chips
-1/2 packet of San Clemente cookie dough in Brownie No Frownie flavor

Chocolate Ganache Ingredients:
-1 tbsp. cocoa powder
-1 Truvia
-1 Tbsp. unsweetened almond milk

Directions:
-Mix pancake ingredients
-Mix chocolate ganache igredients in separate bowl
-Spray fry pan with coconut oil and cook pancakes on medium heat
-Flipping pancakes approximately every 2 minutes.
-Top pancakes with goodies
-Eat all da chocolate
