Funfetti Protein Cupcakes

These cupcakes are my new favorite late night snack. They taste even more amazing with Dollop low sugar frosting. Use my code Eatingbrofood for 10% off your order here. They even clock in at under 44 calories without frosting if your looking for a light treat. I was craving Funfetti and I’ve finally come up with a healthy alternative to the regular cupcakes.

Funfetti Protein Cupcakes ingredients:

  • 2 tbsp. Trader Joe’s Pancake mix
  • 8g /1 tbsp funfetti cake mix
  • 2 tbsp. Applesauce unsweetened
  • 8g/ 1 tbsp. Oat Flour
  • 3 tbsp. vanilla protein powder
  • Extra sprinkles
  • 1 Egg White
  • 1 tsp. Vanilla Extract
  • Baking Truvia to taste
  • 1/8th tsp. Baking Soda
  • 1 tsp. Baking Powder
  • Almond milk as needed
  • 1 T Dollop frosting each (optional)

Directions:

  • Preheat the oven to 350 degrees F
  • Mix all ingredients and make sure at the end you slowly add almond milk
  • Put in sprayed muffin tins
  • Bake 8-10 minutes
  • Makes 5 protein cupcakes
