I’m Italian so it is basically a right of birth for me to love all meals with mozzarella. I kept seeing recipes incorporating pasta sauce with eggs so I decided to create my own version. This meal is satisfyingly hardy while also managing to be light. In other words it. is. perfect. Look at that cheese tho.
Italian Pizza Eggs Ingredients:
-2 eggs
-8 oz can of tomato sauce
-fresh thyme or basil
-1 clove garlic
-1/2 a small yellow onion
-1/4 cup mozzarella cheese
Directions:
-Sauté diced onion and diced garlic clove in a dab of margarine or olive oil in a medium size sauce pan on medium heat
-Once soft add the tomato sauce and spices
-Bring sauce to a boil and then turn the heat down to low
-Crack the two eggs in the sauce and put the lid over the pan for 6 minutes until the eggs are poached (add mozzarella 5 minutes in)
