Strawberry Shortcake Protein Cupcakes

Cupcake Ingredients:

-2.5 scoops (118g) BSN Vanilla protein
-½ teaspoons baking powder
-½ cup strawberry puree
-1.5 egg whites
-1/8 cup skim milk
-2 Tablespoons coconut oil
-Baking Truvia to taste

Frosting ingredients:
-2 oz. (56g) Non-Fat Cream Cheese
-30g Move Over Butter
-Truvia to taste

-Grease the muffin tin with some of the coconut oil
-Puree the fresh strawberries in the food processor until it becomes a paste
-Mix all the cupcake ingredients together in a bowl
-Distribute the batter evenly in greased muffin tin
-Cook at 350 degrees F for 10 minutes
-Whip frosting ingredients with a fork vigorously until smooth
-Top cooled down cupcakes with frosting
