15-Min Cheddar Brie Prosciutto Potato Egg Cups

Everything but the kitchen sink egg muffin cup right here. This is a full on foodie fusion recipe designed and created exclusively by me, owner of Eating Bro Food. This isn’t necessarily a light recipe but because of the treats bite size nature the calories stay relatively low at just above 100 calories! For a breakfast so cheesy, meaty and perfect you wont even believe the calories are that low!

Ingredients:
-2 Tablespoons Sharp Cheddar
-1 oz Brie Cheese
-4 Eggs
-2 Large Defrosted Hash Browns
-2 Slices Prosciutto
-Lemon Pepper Salt (I used Trader Joe’s)

Directions:
-Preheat the oven to 400 degrees F
-Squish room temperature hash browns into the bottom of a greased 6-muffin pan tin
-Cook just the hash browns for 5 minutes
-Take the tin out of the oven now put in the beated eggs, prosciutto and lemon pepper salt cook for 5 minutes
-Take the tin out of the oven and put the two cheeses on top and cook for 5 minutes
-Cool for 5 minutes
