Salted Caramel Date Sauce

This sauce is AWESOME. Pictured above is my date caramel on top of frozen banana “nice-cream” with raw cocoa powder. The caramel is RAW Vegan/Paleo. Perfect for athletes pursuing a high performance diet/lifestyle focusing on natural ingredients. This caramel has a far lower glycemic index than store bought caramel. If you trade in fake processed caramel for this raw alternative your mind & body will thank you.

Ingredients:
1 cup soft Medjool dates, pitted
1/4 teaspoon fine sea salt, or more to taste
1 teaspoon fresh lemon juice
1/4 cup almond milk, plus extra for desired texture
1 teaspoon vanilla extract
1 Tablespoon coconut oil

Directions:
-Soak the dates in filtered water for 2 to 3 hours, until soft.
-Filter the dates out of the water and place them in food processor (or blender, I recommend a food processor)
-Add all the ingredients above and blend until smooth and creamy, adding extra almond milk if necessary to facilitate blending.
-Store in an airtight container in the fridge for up to two weeks
